If you are riding an normal, unintelligent mount (like a horse), you can either control it so its actions can take place on your initiative, or you can let it have its own initiative and not control it. If you are riding an intelligent mount (like a dragon), it always has its own initiative and you're not in control.
A normal mount that you are controlling has three actions - dash, disengage, or dodge. It does not get attacks. If you chose not to control the mount, or if the mount is intelligent, it will have attacks and actions like any creature.
RAW there is not a stated way to switch between allowing the mount its own initiative or controlling it; I would likely allow it, but force the player to spend either their action or reaction to switch modes, as it were. Keep in mind, an uncontrolled mount is NOT yours to command as a player - it reverts to being an NPC under DM control.
A mount may provoke AoO just like a player.
You retain all your normal action options while riding. Mounting a mount takes 15 feet of movement speed, but controlling it and staying mounted takes no action or movement. You can be dismounted - if something knocks you prone, or moves your mount against your will, you must succeed at a DC 10 DEX save or fall off.
Find Steed summons a mount instantly (you still have to mount), and makes it quasi-intelligent and able to understand a spoken language. Unlike a normal mount, you can choose to have a spell that targets you also target your mount while riding it. The steed is always summoned at full HP, and disappears when it drops to 0. Otherwise, it functions as a normal mount and has only the dash, disengage, and dodge actions unless you choose not to control it. However, you can speak to the mount telepathically; it's more similar to a ranger's companion pet than a standard mount.
As far as how all this works in combat: If you are controlling the mount, its movement essentially becomes yours (Technically you still retain your movement, and could dismount and walk away, but I can't fathom why you'd want to do that when you are riding a mount you control.) You can attack and take actions as normal.
If you are not controlling the mount, it has its own initiative and will do whatever it wants. You take your normal initiative, but if you want to move somewhere the mount isn't standing, you have to dismount. This mode works just like normal initiative - the only action you can take during its turn is a reaction (if appropriate), and it spends your reaction for the round.

Phillis, Il y a un dizaine de gnolls qui viennent de surgir. S'il te reste une boule de feu, centre là au niveau du sol, environ 1,5m dans mon sud en nous excluant Tanis et moi ! Ca fera du menage.

Comme prévu, le mage lance sa boule de feu au milieu des gnolls et il se concentre pour exclure Tanis, Amud et Mantus.@apersdégât de feu magique Dex DD15 pour demi dégât
